This super easy and delicious InstantPot mashed potatoes recipe is a family favorite, especially for Thanksgiving! I like to make things easier for myself on a day filled with cooking multiple dishes by using my InstantPot. What’s my secret ingredient? This mashed potatoes recipe has cream cheese! Yup— believe it or not, that little touch takes it over the edge from ordinary to extraordinary.

Easy InstantPot Mashed Potatoes Recipe
5 pounds of potatoes, peeled and cubed
4 teaspoons salt
2 sticks butter (1 cup)
1 cup cream cheese
1/2 cup whole milk
wash your potatoes. peel and chop your potatoes into cubes and toss in your InstantPot
Add enough water to cover your potatoes completely
Add 2 tsp of salt. Close the lid of your InstantPot, set the pressure valve to steam. Hit the pressure cook mode and set it for 12 minutes
after it has completed the 12 minutes of cooking, use a dish towel to quick release your valve (this helps you avoid a burn from steam releasing). Open the lid after it has finished steam releasing
drain your potatoes completely of water. Return potatoes to your InstantPot
add your butter, cream cheese and 2 tsp of salt. Mash together well
Turn your InstantPot sauté mode on to assist the butter and cream cheese in melting, once they have melted turn off sauté mode
finish mashing your potatoes to your preferred level of creaminess
