Shortcut Aushak: easy Afghan dumplings recipe

Finding a way to enjoy the flavors of Afghan cuisine without all the time and effort is a life hack I cherish. If you’ve ever folded the vegetarian Afghan dumplings Aushak, you know how time consuming it can become. And on a busy workday, sometimes its not possible to do that work that’s required.


As a result, I whipped up this easy Aushak recipe, a simple and easy Afghan dumpling recipe that makes it possible to enjoy the flavors in a fraction of the time.

 

Shortcut Aushak Recipe


Ingredients:

- 1 box Chickpea pasta

- 1 can tomato sauce

- 1lb cooked ground beef

- 2 tsp salt


- 1/4 cup split yellow lentils

- 1 c water


- 3 bunches of green onions

- 2 tbsp oil


Instructions:

  1. Cook your ground beef. You can find full recipe here

  2. In the meantime, in a pot add your lentils and water, allowing it to boil on high heat until all of the water has evaporated. Lentils should still hold their shape but be soft enough to eat.

  3. Add your lentils to your cooked ground beef and tomato sauce with salt in a pot. Mix well and bring to a boil on high heat, once it has boiled once turn off the stove.

  4. Assemble your mint yogurt based on this recipe

  5. Follow the instructions on your pasta box to cook your chickpea pasta. Once cooked, drain and set aside.

  6. Wash and chop your green onions. Add oil into a frying pan, and sauté your green onions lightly on high heat for 2 minutes.

  7. Now begin assembling your dish. Begin with the pasta as the base, add your cooked green onions evenly over top. Then drizzle your mint yogurt and finally add the lentil ground beef mixture evenly across the top.
